Chia Pods 3 ways
Hi gorgeous souls!
How good is this summer weather we have been fortunate enough to encounter the last week? (intermingled with that pesky rain!) But yay for occasional bouts of sunshine, daylight savings and evening swims. All of these things make me a very happy lady!
As you may have gathered from previous posts- I often get hangry (hungry + angry).
A gals gotta eat- and stat!
I get soooo busy doing whatever it is I am working on and often there is way too much of a gap in between meals. I have been working on fixing this for a while and one thing I find helps that is meal prep! Quick, easy meals and snack ideas I can make in advance and just grab and eat.
This week I have included 3 of my fave make at home chia pod recipes. I make 10 at a time on a Sunday and my partner Levi and I each take one a day as breakkie with a smoothie, lunch with some fruit or a quick afternoon snack, and they last us the whole week!
As a bonus- they are perfect for re-using your Delicious Skin jars, we love recycling!
Chia seeds are high in calcium, protein and anti-oxidants! I also like to pop in some superfoods into my chia puddings for that extra boost. Most health food stores and even some supermarkets now carry ingredients like maca, lacuma and mesquite but feel free to omit if you prefer it without or cant get your hands on some of the ingredients!
I used a household tablespoon/ teaspoon for these recipes which are generally a bit smaller! If you use a measuring spoon you may need to use a teency bit less.
The OG
This was the first Chia recipe I was taught by Levi’s mum and it is still my favourite! Yum!
In this order, in each up-cycled jar place:
- 4 T coconut cream
- 3 T water
- 1 T+ 1 t chia seeds
- 1 t chopped walnuts
- 1 t goji berries
- 1 t coconut shreds
- ½ t coconut sugar
- ½ t mesquite powder
- a pinch of nutmeg
Stir and pop the lid on. Refrigerate for 30 minutes & enjoy!
Choccy Mousse
In this order, in each up-cycled jar place:
- 3 T coconut cream
- 3 T water
- 1 T + 1 t chia seeds
- 1 T chopped almonds
- 1 t cacao
- ½ t coconut sugar
- ½ t maca powder
- a pinch of cinnamon,
- Himalayan sea salt and cayenne pepper
Stir and pop the lid on. Refrigerate for 30 minutes & enjoy!
Fruit crème
In this order, in each up-cycled jar place:
- 2 T coconut cream
- 2 T water
- 1 T + 1 t chia seeds
- 3 T defrosted & blended frozen fruit (mango or raspberry are my fave, but use whatever you have on hand)
- ½ t coconut sugar
- ½ t lacuma powder
Stir and pop the lid on. Refrigerate for 30 minutes & enjoy!
