#whatveganseat- a day in the life of my belly + a few recipes! ๐๐๐
I often get asked what I eat in a day- especially from people who arenโt vegan, or are attempting to make the transition to a vegan/ plantbased diet! If this is you- YAY! Welcome ๐ I am so happy you are considering a healthier, more humane alternative!
One thing I want to say before I dig right into this is:
There is no โRIGHTโ way to be vegan.
That is my utmost belief! Absolutely not! You may be vegan for health reasons, or for the animals. Veganism is not defined to a specific body shape, type or colour (and to hear more on this topic I highly recommend you go and listen to this podcast ASAP). You may be the kind of vegan who loves to eat raw- or you might be the type of vegan who just wants to eat:
Bio cheese, Just Mayo and Gardein Fishless Fillets all day long (breakfast lunch and dinner, between 2 bits of bread, with Nuttelex please and thank you very much!)
Or you might be a combination of both. My point is- if you are choosing to be vegan, or eat a plant based diet, or even incorporate more plant based meals into your life-
THANK YOU! Literally- you rock!
Your choice is positively impacting the environment by reducing greenhouse gas emissions, reducing water consumption & reducing deforestation. By going vegan you can save the lives of approximately 200 animals a year according to PETA. That is pretty darn amazing.
Just to be clear- this outline is definitely just an example! I am by no-means a nutritionist or claim to eat a perfect diet, or recommend this is what you should eat. The purpose of this post is just to share with you some of my favourite meals because itโs a question I get asked a lot- and hopefully get some more inspiration from all of you.
Breakfast
Most days I have a huge smoothie for breakfast. I keep a bag of frozen blueberries, frozen raspberries and frozen mango in the freezer at all times. I also have a basket in my kitchen filled with random ingredients (nuts, coconut shreds, cacao, maca, lacuma, mesquite, protein powder, cacao & coconut sugar) and I usually just throw a few bits in and see what happens!
Look, I am going to be honest. I am definitely not a smoothie wizard.
Sometimes my smoothies come out brown and tasting like Iโve scraped the jungle floor into a glass (or this is what my friend Kat likes to tell me ๐๐ ๐- thanks Kat!) I have to plug my nose and gulp em down. Dang- I really hate it when this happens! One thing I have learnt is simple is best (just like our skincare!). A few ingredients, and donโt over do it on supplements or superfoods! This is my absolute fave, go-to, never fail, this-is-#damndelicious smoothie:
- 1 C ripe, chopped, frozen bananaโs
- ยพ C coconut water
- ยพ C green juice (you can either juice your own or buy pre-made from the supermarket, I am generally quite lazy in the mornings and go pre-made. I like this one!)
- 2 C spinach or kale
- 1 heaped T of nut butter (I like this one) or a handful of almonds optional
- 1 T Lacuma optional
Throw it all in a high-powered blender and BLEND baby blend! This makes enough for Levi and I and it normally gets us through to morning tea.
Morning tea/ afternoon snack
Usually I go for something easy and quick here! A piece of seasonal fruit or 2 (my faves are passionfruit and kiwifruit!), a handful of almonds and a soy latte, carrot sticks & sugar snap peas with hummus- or if I have been organised this week Iโll grab one of these bad boys straight from the fridge! Perfect! No fuss, get it in ya!
Lunch
You know how recently Mark Zuckerberg shared that infamous pic of his wardrobe- and it was like, all identical? This is my lunch to a tee! ๐ ๐ I have tried other things. I truly have. I always come back to this. Itโs easy. Itโs filling. It sustains me. It has some protein in there, itโs good for your gut health, itโs freakin delicious. Check Check Check to all of the things!
- Buckwheat bread- 2 slices, toast it up
- Peace Love & Vegetables cashew cheese- spread it on.
- Hummus, any kind (letโs face it, you canโt go wrong with hummus!)- spread it on!
- Avocado ยฝ- mash with lemon juice, S+P & chilli flakes. Spread that on too!
- Sauerkraut, Layer + eat some cos that shit is good!
- Dukkah. Sprinkle that on good. YAS ๐
There you have it. A modern masterpiece. This lunch will seriously change your life!
Dinner
I am a big fan of making sauces and meals ahead of time and freezing in batches to add to fresh veggies later. I have shared this recipe before and here I go again! This is the all time, hands down, best salad dressing recipe I have ever encountered. When I make this- I could eat salad every meal, every day of the week until itโs used up. I have to stop myself from drinking it out of the blender. Recently I was talking with Levi about what I felt like eating for breakfast, I couldnโt pinpoint my favourite breakkie and he said โa bowl of glory bowl dressing?โ We both thought it was hysterical- because he was totally right! This is one you DO NOT want to miss!
Variations:
- This sauce also freezes well, I make a double batch and freeze ยพ of it in 3 separate portions to save time later.
- I also really like it in a fresh & quick โno cook' salad- shred kale, & massage through- sit to soften while you prep other veges. Top with grated beets, carrots, sauerkraut and roasted sweet potatoes! Yum! So fresh!
It is SOOO addictive- be warned!
